JX was supposed to come out with this primer for Burgers a year ago but he never got round to doing it so instead that job has come upon me.
Malaysia's gift to the fast food world is Burger Ramly and are usually best served by road side stall operators and interestingly, many times they are founf in front of 7-11s.
What makes a good burger?
Chicken or Beef. While to me, a burger can only be beef, there are many Malaysians that cannot eat beef hence chicken burgers. Either way it's fine to me. Some operators make better chicken burgers than beef burgers.
Don't butterfly the patty Some burger chefs often cut the burger patty along the horizontal axis - hence butterflying the patty. That's a no no. This kills the juiciness of the patty, the result will be a dry patty. A burger that's overcooked and too dry is wrong. That said, there are some burger cooks that manage to butterfly the patty and yet doesn't make it too dry. But these guys are a very rare breed.
Special I always take my Burger Ramly - special. Special means it's wrapped in an egg.
Sauces Necessary sauces to make the burger complete would be worchestershire sauce, mayo, chilli & pepper. The order in which the sauce is put in is important to some. Not to me though.
Cheese While I love cheese, Burger Ramly can actually be had without it. So this is not a must.
Vegetables Vegetables (lettuce & tomato) need to be fresh. Now if someone were to serve their burger ramly with zucchinis as well, that would be awesome. |
